黄油青口
冷冻的青口贝是超市里常见的食材,进口自新西兰的冷冻青口一般质量都很好,肉质厚体型大,一般带半壳急冻保鲜。仅使用简单的食材,就可以做出可口的菜品,非常适合家庭聚会。由于做法简单,也可以在旅游时或郊外野餐时显一显身手。
Frozen mussels are common items in supermarkets’ frozen section. Those from New Zealand are usually with good quality (and usually pre-cooked with half shell). With some simple ingredients from your fridge, it can turn into a great party dish. It provides an easy crowd pleaser in outdoor BBQ too.
原料 Ingredients
青口贝,洋葱,黄油,白葡萄酒,香菜
Mussels, onion, butter, white wine, parsley
第一步 Step 1
在锅中加入一块黄油,中火融化。切忌火力过大,会使黄油太快糊掉。之后加入切碎的洋葱,文火煸炒5分钟,直至洋葱完全软化。
Melt a knob of butter in your saucepan with medium heat. Don’t use high heat or the butter will melt too quickly. Sweat the chopped onion for 5 mins, until it softens well.
第二步 Step 2
将解冻的青口贝倒入锅中,加盐、胡椒、一杯白葡萄酒,之后改用大火开盖煮2分钟,让酒精尽量挥发掉。之后加2勺质量较好的初榨橄榄油,盖上锅盖煮3-5分钟,直至青口贝完全煮透。
Put the defrosted mussels into the pan, season with salt & pepper, add a glass of sweet white wine. Turn the heat up and boil without the lid on for 2 mins, to get rid of the alcohol. Then add a tablespoons of good quality extra virgin olive oil and cover the pan to boil for 3-5 mins, until the mussels are cooked through.
第三步 Step 3
打开锅盖,加入切碎的香菜叶并关火。出锅前搅拌均匀,并确保调味不会过咸或过淡。
Turn off the heat and add chopped parsleys. Stir well before serving and taste to season.
食用 Serving
食用时搭配酸面面包绝佳,最美味的应该是锅中的汤汁,用面包蘸着吃,搭配烹饪时用的白葡萄酒。
This dish goes greatly with sourdough bread. The mussels are tasty, but the best part is in the sauce. Dip with your bread and enjoy, together with the wine you used to cook.
